So, I love food trucks, and have these fantasies of running one, but of course, I think my current job pays enough with a lot less work :(
But here are my few ideas:
A Grilled Cheese truck, but unlike the ones I have seen before, this one would have grilled cheese made via different *methods*, not just ones with different or more cheeses. For example, a regular grilled cheese, a cheese with crusty bread grilled in a grill pan (with ridges) and a steamed, soft bread grilled cheese, like they made in the school cafeteria!A BLT truck that made 3 kinds of BLT. A normal diner style one (not so much bacon, on good bread, either sourdough or whole grain), a big "baconator" style one, and a classic tomato sandwich (mostly tomato!) with a little bacon.An old-school Greek roadside souvlaki stand, with lots of small souvlakia (not the huge ones you see nowadays, even in Greece!)A Greek Island-style gyro stand, with pork gyros, no lettuce, and a few fries thrown in there
